Pork skewers with banana and pineapple

Ingredients

1kg pork tenderloin
2 bananas
1 pineapple
1 red pepper
1 onion
Olive oil
Salt

Side ingredients

360g rice
50g raisins
1 spring onion
1 garlic clove

Directions

  1. Peel the bananas and pineapple and cut into 3cm cubes. Cut the onion and red pepper into similar sized squares.

2. Clean and cut the pork tenderloin into 3cm cubes.

3. Thread the pork, pineapple and bananas onto skewers, alternating with the pepper and onion. Add salt and pepper to taste.

4. Barbecue or griddle the skewers for 5 minutes each side.

5. For the side dish, chop and sauté the spring onion with the garlic. Once the rice is cooked, add to the pan with the spring onion and add the raisins. Serve as a side.
