Ingredients
750g pork tenderloin
400g mushrooms
1 onion
2 garlic cloves
3 tablespoons olive oil
125ml red wine
Parsley
Oregano
Thyme
Salt and pepper
Directions
- Heat the olive oil in a pot and cook the minced onion and garlic.
2. Clean and slice the mushrooms, add to the pan when the onion is well cooked. Include the parsley, oregano, and thyme. Season to taste with salt and pepper and add the wine. Cook for 3-5 minutes.
3. Rub salt and pepper to the pork tenderloin, add to the pot and cook for 45-50 minutes over low-medium heat.
4. Serve the tenderloin in medallions and accompany with sauce. Decorate with parsley.
