From April to May 2025, the “EU Pork, The Smart Choice” campaign held six professional masterclasses across China, training 249 chefs in Suzhou, Hangzhou, Chengdu, Guangzhou, Hefei, and Qingdao. Conducted in partnership with Omick Cooking School, the sessions provided in-depth insights on the quality, versatility, and sustainable production of European pork.
Each masterclass combined theoretical knowledge with practical classes, giving chefs direct experience working with Spanish and Portuguese pork. Participants learned about EU food safety and sustainability standards, animal welfare regulations, and its high quality, followed by guided preparation of both Chinese and European-style dishes. In addition, a carving session also took place, introducing ham history, carving techniques, and tapas recipes.
The sessions emphasised:
- Quality and traceability under EU regulations
- Use of different cuts for diverse culinary applications
- Sustainable farming practices behind European pork production
