EU Pork, Excellence from Farm to Fork campaign cooperated with New East Cuisine cooking school for the series of masterclasses taking place in 2022. The third event took place within the school in Guangzhou, where 63 chef trainees participated in the day filled with new knowledge and practice.
Participants started at 9am with a theory session, in which two professional chefs explained the characteristics of EU pork from Spain and Portugal, and the details of the different cuts. Moreover, a professional ham carver briefly explained the production process of the ham and other cold cuts traditionally made in Europe.
Once the trainees knew all the basic background for EU Pork, it was time to put their knowledge into practice. They were divided into 3 groups and rotated among three different practical sessions, including ham carving, Western cooking and Chinese cooking. During these 2h sessions, they followed the experts’ professional instructions to create delicious dishes using EU Pork from Spain and Portugal.
Overall, it was a whole day of learning in which participants finished with a deep understanding of the product, making an impact on their future purchasing decisions as professional chefs.
During Guangzhou masterclass, participants cooked a variety of tapas using cured ham from Spain, Home-cooked braised pork, using pork belly from Spain, and pineapple roasted pork ribs with Spanish ribs.
