Twenty-four food and restaurant professionals gathered for a ham carving training in Tianjin on August 24th. The event was led by two professional ham carvers, Andy Zhan and Jason Li, who have a have wide knowledge of the art of ham carving, the process and history of ham curing in Spain and Portugal, and can give an enjoyable lesson on how to carve a perfect slice of ham.
Attendees enjoyed hours of practical training, tasting and a small competition using the techniques learned, all of this followed by a set meal featuring cured ham dishes, created by Lynd Li, Four Seasons’ head Chef.
