On April 11, 2024, the “EU Pork, the Smart Choice” campaign’s tasting event took place at the Manila Grand Hyatt Hotel. Professionals from the pork industry gathered to exchange experiences and get new insights into European pork. The event aimed to deepen the understanding of European pork among the participants, showcasing its advantages in safety, quality, sustainability, and animal welfare. Activities included a Serrano ham carving demonstration, a 5 course set meal cooking demonstration, and a tasting of premium pork dishes. The special pork menu included:
- Serrano ham with baked cheese in phyllo pastry
- Spanish Secreto country-style terrine
- Sous vide Spanish pork loin
- 48 hours mango wood-smoked Spanish pork ribs
- Crispy roasted Spanish Pork belly
During the event, Chef Soc Santos provided insights into the production and processing system of European pork, emphasizing its safety, traceability, and sustainability. While both Chefs Joshua Boquiren and Untung Taurat demonstrated the culinary versatility of European pork, creating fusion dishes blending Filipino and Western flavours. In addition, an expert carver, Sheryl Sabio, was in charge of the carving demonstration.
To complement the dishes, Spanish and Portuguese specialty wines were selected, enhancing the culinary experience.
