On June 1st, the Ritz Carlton hotel in Chengdu hosted an EU pork tasting event for professionals. MC and Head Sommelier Henry Wu guided the audience through the event, which comprised of tasting four different dishes prepared by Simon Song, Ritz Carlton’s Executive Chef, as well as a cooking and ham carving demonstration. While Mr Song performed the cooking demonstration, guest Chef Zhang Zhengyu went through the cooking process, key ingredients of the dishes and the key attributes of EU pork. Participants were able to enjoy the four target pork cuts of the campaign (belly, loin, collar, ribs) in four different dishes, while learning about EU pork.
After the chefs introduced each dish to the audience and performed the cooking demonstration, the sommelier explained the best wine pairing for every dish using Spanish and Portuguese wines, so pork flavours can be enhanced. The event also featured the experienced ham carver Jia Tang, who carved a Spanish cured ham for attendees to taste and explained the curing and carving process as well as the key characteristics of the product.
